For the Mac Pro 2013 its built-in HDMI port is like the LG screen and the Mac mini a HDMI 1.4 port but unlike the Mac mini it does support up to 4K but again only up to 30fps and you would think that would mean it should work at 2560x1080. In theory a HDMI 1.4 port as used by the LG 29U58 screen can do 4K resolution but at only 30fps, it might therefore be able to do the 2560x1080 you want at 60fps but not as mentioned on the built-in Mac mini HDMI port.

The Mac mini HDMI port itself is only supported by Apple at a maximum resolution of 1920x1200 pixels so absolutely definitely you are not going to get the full resolution using the built-in HDMI port.

Surely this is a display driver issue relating to Thunderbolt.The following is not guaranteed to work for you since you have a Mac mini but it did solve another users identical problem who was using a Mac Pro 2013 and the same ultra wide LG screen. This suggests to me that my TV is not to blame for having outdated HDMI. I checked the latest similar TV offered by Philips and 3 or the 4 HDMI inputs are v1.3. I have checked my TV (Philips 42PFL7404H) specs and it supports HDMI v1.3. That is, after a pretty random length of time, the colours on my TV invert as shown in the picture above rendering the display unreadable. I've tried using my TV as an external monitor with my 2011 MacBook Pro and I continue to have serious picture problems.
